Aged Cheddar - Cow's Milk - New York
Classic sharp cheddar. Enough bite to enjoy on its own, but also not so strong that it will overpower. Very versatile - equally at home as a snacking or cooking cheese.
Wine Pairing: Pairs best with rich white wines, particularly semi-sweet Riesling. For a red, try something with a bit of oak- a Bordeaux or aged Rioja. Dessert wines also pair nicely with a very sharp cheddar.
