One of the great American cheeses, Humboldt Fog is a unique, aged chevre.
The bloomy white rind encases a prominent cream line, which in turn gives way to the cakey, moist interior. Full, rich (but not overpowering) flavor with subtle citrusy notes. The cheese is beautiful, too, with a dark vegetable ash line running through its center.
Try pairing with fresh grapes, a dry white, or a Pilsner.
